1 pkg. Or 2 1/4 tsp. Dry yeast
1 tsp. Sugar
1/4 cup warm water (110-115 degrees)
1/4 cup sugar
3 1/2 - 4 cups flour
1 cup boiling water
1 egg
1/2 cup whipping cream
1/4 cup shortening |
1. Place yeast, sugar and warn water in small bowl. Let sit fro 10 min, until yeast begins to foam.
2. Place shortening and sugar in mixing bowl add boiling water and stir tell dissolved, then add cream.
3. When mixture is cooled somewhat, beat in egg, then add in yeast. NOTE: if yeast is added to hot water it will die.
4. Beat in 2 cups un-sifted flour � cup at a time. When dough is too stiff to stir work with hands till firm enough to hold shape.
5. Place on lightly floured cutting board and knead (2-3 min.), add flour if needed� add as little as possible to prevent beignets from becoming heavy and dense in texture.
6. Knead till smooth. Flatten with your fingers and roll 3/8� thick.
7. Cut dough in 3 � squares. Cook in oil which is at 375 degrees
8. Drop beignets in oil one at a time, let rise. When they come to the top sprinkle oil on the top of them.
